Few wines demand more patience than ice wine. Our estate Riesling remains on the vine into winter, where naturally freezing temperatures yield fruit of extraordinary concentration. Following a slow, extended fermentation in stainless steel, rich notes of apricot preserve, acacia honey, and candied citrus unfold across a vibrant, lingering finish.
Harvested by hand on December 13 and 22, 2024, from estate Riesling grapes naturally frozen on the vine. Picked during two frigid winter mornings at temperatures ranging from 8°F to13°F, the fruit reached 40° Brix at harvest. After almost two years of patience and careful tending to, the final product rests at 12.2° Brix and 13.3% ABV.
